Cardamom and Rose Water Muffins

▎Ingredients:

• 100g all-purpose flour

• 1 teaspoon baking powder

• 2 large eggs

• 66g white sugar

• 60g vegetable oil

• 50g plain yogurt

• 1 teaspoons ground cardamom

• 1 tablespoon rose water

▎Directions:

1. Preheat the Oven: Preheat your oven to 350 degrees F (175 degrees C). Grease the cups of a muffin pan (you will need 9 cups).

2. Sift Dry Ingredients: In a bowl, sift together the all-purpose flour and baking powder. Set aside.

3. Beat Eggs and Sugar: In a large bowl, combine the eggs and white sugar. Beat constantly with a whisk or electric mixer until thick and pale, about 8 minutes.

4. Mix in Wet Ingredients: Gradually mix in the oil, plain yogurt, ground cardamom, and rose water until well combined.

5. Combine Mixtures: Stir in the sifted flour mixture by hand until just combined. Be careful not to overmix.

6. Fill Muffin Cups: Spoon the batter into the prepared muffin cups, filling each about 3/4 full.

7. Bake: Bake in the preheated oven for 25 to 30 minutes, or until the muffins are firm to the touch and golden brown.

8. Cool and Serve: Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
