Eggplant Tomato Stew Recipe

▎Ingredients:

 2 Eggplants

6 Tomatoes

3 Zucchini

1 Bell Pepper (optional)

 2 tbsp Tomato Paste

Vegetable Oil (as needed)

 Salt, Black Pepper, Turmeric (to taste)

▎Instructions:

Step 1. Prepare Eggplants: Wash, peel, and slice the eggplants. Sprinkle with salt and let sit for 1 hour.

Step 2. Fry Eggplants: Heat oil in a pan and fry the eggplant slices until golden and soft.

Step 3. Season: Flip the eggplants, add black pepper, turmeric, and salt; sauté briefly.

Step 4. Add Tomatoes: Halve the tomatoes and place them under the fried eggplants in the pan.

Step 5. Add Bell Pepper: If using, arrange sliced bell peppers around the mixture.

Step 6. Prepare Tomato Paste: Dilute the tomato paste with boiling water and pour it over the stew.

Step 7. Final Cooking: Cover and simmer for about 30 minutes.

Step 8. Serve: Enjoy with bread.
