🌸 Persian Halva

Ingredients:
– 3 tablespoons all-purpose flour
– 100 g unsalted butter
– A few cardamom pods, crushed
– ½ cup water
– ½ cup granulated sugar
– 2 tablespoons rose water
– 1 tablespoon brewed saffron
– 2 tablespoons vegetable oil

Instructions:

1. Prepare the Syrup:
In a small saucepan, combine the water, sugar, and crushed cardamom pods. Bring to a boil over high heat, stirring until the sugar dissolves completely. Remove from heat, cover, and let the cardamom steep for a few minutes. Stir in the rose water and brewed saffron. Set the syrup aside.

2. Toast the Flour:
In a dry stainless-steel pan, roast the flour over low heat for 10–15 minutes, stirring frequently, until it turns a light golden brown and gives off a nutty aroma.

3. Make the Halva Base:
In a non-stick pan, melt the butter and oil together. Add the toasted flour and stir continuously over low heat until the mixture darkens to a rich coffee-like color.

4. Combine and Finish:
Slowly pour the warm syrup into the flour mixture, stirring constantly to avoid lumps. Continue stirring over low heat until the halva thickens slightly and becomes smooth. Remove from heat and serve.
