🍎 Apple Pie Muffins with Cinnamon
These muffins combine the cozy flavors of cinnamon and apples with a light, fluffy texture—perfect for breakfast, brunch, or a sweet snack.
🧺 Ingredients
2 apples (peeled and thinly sliced or finely diced)
4 eggs (separated: yolks and whites)
1 cup + 1 tbsp sugar (1 tbsp reserved for coating apples)
100g (7 tbsp) softened butter
½ cup water
250g (approx. 2 cups) all-purpose flour
1 tsp baking powder
½ tsp vanilla extract
1 tsp ground cinnamon (for apples)

1. Preheat & Prepration
Preheat your oven to 180°C (350°F).
Line a 12-cup muffin tin with paper liners or lightly grease.
2. Cinnamon Apples
In a bowl, toss the apple slices with 1 tbsp sugar and 1 tsp cinnamon.
Set aside while you make the batter.
3. Make the Batter
In a large bowl, beat together butter and 1 cup sugar until light and creamy.
Add egg yolks one at a time, mixing well after each addition.
Stir in the vanilla extract.
Sift the flour and baking powder together.
Gradually add the flour mixture to the wet ingredients, alternating with the water, until the batter is smooth.
4. Whip & Fold
In a separate bowl, beat the egg whites until stiff peaks form.
Gently fold the egg whites into the batter in batches, keeping it airy and light.
5. Assemble the Muffins
Spoon the batter into each muffin cup, filling halfway.
Top with the prepared apple mixture.
Optional: Sprinkle with a little extra sugar and cinnamon for a golden, slightly crunchy top.
6. Bake & Cool
Bake for 25–30 minutes, or until golden and a toothpick comes out clean.
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
💡 Tips & Variations
For crunch: Add chopped walnuts or pecans to the batter.
For a decorative finish: Arrange apple slices in a spiral or rose pattern on top.
Mini version: Using mini muffin pans? Bake for 15–20 minutes instead.
