For the Salad Dressing:

½ cup of chopped dill

1.5 cups of whipped yogurt

2 tablespoons of mayonnaise

1 teaspoon of mustard

Salt and black pepper to taste

Grated garlic (optional)

1. Prepare the Broccoli:

• Wash the broccoli thoroughly and chop it into bite-sized florets. Peel and slice the stalks if desired.

2. Blanch the Broccoli:

• For a softer texture, bring a pot of water to a boil, add broccoli florets, and cook for about 2-3 minutes. Transfer them to an ice bath to stop the cooking process. Drain and let cool.

3. Sauté the Carrots:

• Grate the carrots using a large grater. Sauté them in a pan with olive oil until slightly softened, then let cool.

4. Combine Salad Ingredients:

• In a large bowl, mix the cooled broccoli, sautéed carrots, and chopped pickles.

 

5. Prepare the Dressing:

• In a separate bowl, mix the mayonnaise, mustard, and yogurt until well combined. Add chopped dill, salt, black pepper, and grated garlic (if using). Stir to combine.

6. Combine Salad and Dressing:

• Pour the dressing over the salad mixture and toss well to ensure everything is coated. Finally, sprinkle the canned corn on top.

7. Serve:

• Transfer to a serving dish and enjoy your refreshing broccoli salad!
