Coffee Butter Cake

🧂 Ingredients:

– 4 medium eggs
– 100 g unsalted butter (softened)
– 280 g cake flour
– 2 tsp baking powder
– 3 tbsp instant coffee (e.g., Nescafé)
– 1½ cups sugar
– 1 cup milk

👩‍🍳 Instructions:

1. Preheat and prep the pan
Set your oven to 180°C (350°F). Lightly grease a cake pan with butter and line the base with parchment paper.

2. Combine dry ingredients
Sift together the cake flour and baking powder in a bowl. Set aside.

3. Make coffee milk
Warm the milk slightly and stir in the instant coffee until fully dissolved. Let it cool to room temperature.

4. Cream butter and sugar
In a large mixing bowl, beat the softened butter and sugar using an electric mixer until the mixture becomes pale and fluffy.

5. Add eggs
Add the eggs one at a time, mixing thoroughly after each addition to ensure a smooth batter.

6. Mix everything together
Alternate adding the coffee milk and the sifted flour mixture to the batter in small portions. Gently fold with a spatula after each addition until the batter is smooth and lump-free.

7. Bake
Pour the batter into the prepared pan and level the top. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.

8. Cool and serve
Allow the cake to cool in the pan for a few minutes. Then transfer it to a wire rack to cool completely before slicing and serving.
