Sweet Bun (Süit Ban) Recipe with Jam Filling
▎Ingredients:
All-purpose flour – 500 g
Warm milk – 250 to 300 g
Eggs – 2
Instant dry yeast – 10 g
Sugar – 80 g
Salt – 3 g
Soft butter – 50 g
Strawberry or kiwi jam: as needed
Egg: 1 (for egg wash)
▎Instructions:
1. Mix Dry Ingredients:
In a large bowl, combine the all-purpose flour, instant yeast, sugar, and salt.
2. Add Wet Ingredients:
Incorporate the eggs and warm milk into the dry mixture. Knead the ingredients together until a dough forms. If the dough appears too dry, gradually add more milk.
3. Add Butter and Knead:
Mix in the soft butter and knead the dough for about 10 minutes until it becomes smooth, elastic, and no longer sticky.
4. First Rise:
Place the kneaded dough in a lightly greased bowl. Cover it and allow it to rise in a warm area for 1 to 1.5 hours, or until it has doubled in size.
5. Shaping and Filling:
Once the dough has risen, gently deflate it and divide it into equal portions. Shape each piece into a smooth ball. Use your finger to create a small well in the center of each bun. Fill the well with a small amount of jam, taking care not to overfill to prevent leakage during baking. Arrange the filled buns on a baking tray lined with parchment paper, ensuring there is space between them.
6. Second Rise:
Cover the buns and let them rest for an additional 30 minutes until they become slightly puffy.
7. Egg Wash:
Beat 1 egg with a splash of milk or saffron, then gently brush this mixture over the tops of the buns.
8. Baking:
Preheat your oven to 180°C (350°F). Bake the buns in the center of the oven for 20–25 minutes, or until they are golden brown.
9. Optional Topping:
After baking, you may choose to dust the buns with powdered sugar or decorate them with shredded coconut or sliced almonds if desired.
