Abgoosht
Abgoosht (also known as Dizi) is a traditional Iranian dish that combines meat, beans, and vegetables to create a hearty stew. Here’s a simple recipe to prepare Abgoosht for about 2 servings.
Ingredients
1 large onion, chopped
500 grams (about 1 pound) lamb or beef (preferably with some bone)
3 medium potato, peeled and quartered
200 grams navy beans
200 grams chickpeas. for dry beans, wash and soak overnight
5 Limon Omani (dried black limes found at Persian markets) or the juice of 1 organic lemon
1 tablespoon tomato paste
2 teaspoons ground turmeric
Sea salt and black pepper to taste
Torshi (Persian pickles) for serving
Instructions
1. In a large pot, combine all ingredients with approximately 10 cups of cold water, ensuring the water covers everything. Bring to a boil. Skim off any scum that rises to the surface using a spoon.
2. Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 2-3 hours, or until the meat is tender and the beans are cooked through. Check occasionally and add more water if necessary.
3. Traditionally, Abgoosht is served in two parts: the broth (which can be enjoyed as a soup) and the meat/bean mixture. To serve traditionally, you can mash the meat and beans together using a wooden spoon or a potato masher until you achieve a chunky consistency.
4. Serve hot with flatbread (like lavash) on the side. You can also serve it with pickles or fresh herbs.
