Apple pie

Making a classic apple pie is a delightful process! Here’s a simple recipe to guide you through it:

Ingredients

For the Pie Crust:

450g all-purpose flour

1 teaspoon salt

1 tablespoon powdered sugar

190g unsalted butter, chilled and diced

6 to 8 tablespoons milk or ice water

For the Apple Filling:

6 to 8 apples (about 6 cups), peeled, cored, and sliced

3/4 cup powdered sugar (adjust based on apple sweetness)

10ml lemon juice

5g teaspoon cinnamon

10g tablespoon butter

Instructions

Step 1: Make the Pie Crust

1. Combine Dry Ingredients: In a large bowl, mix the flour, salt, and sugar.

2. Cut in Butter: Add the diced butter. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

3. Add Ice Water: Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. You may not need all the water.

4. Chill the Dough: Divide the dough into two balls, flatten them into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Step 2: Prepare the Filling

1. Prepare Apples: In a large bowl, combine sliced apples with lemon juice, sugar and  cinnamon. Toss until apples are evenly coated. Let it sit for about 15 minutes.

Step 3: Assemble the Pie

1. Preheat Oven: Preheat your oven to 425°F (220°C).

2. Roll Out Dough: On a floured surface, roll out one disk of dough to fit your pie pan. Place it in the pan and trim excess.

3. Add Filling: Spoon the apple mixture into the crust, mounding it slightly in the center. Dot with small pieces of butter.

4. Top Crust: Roll out the second disk of dough and place it over the filling. You can cut slits for ventilation or create a lattice top if you prefer. Trim and crimp the edges to seal.

5. Egg Wash (Optional): Beat the egg and brush it over the crust for a golden finish.

Step 4: Bake

1. Bake Pie: Place the pie on a baking sheet (to catch any drips) and bake in the preheated oven for 15 minutes.

2. Reduce Temperature: After 15 minutes, reduce the temperature to 350°F (175°C) and continue baking for an additional 35-45 minutes, or until the apples are tender and the crust is golden brown.

3. Cool: Let the pie cool for at least 2 hours before slicing to allow the filling to set.
