Raw Potato Kutlets Recipe
Kotlet is a traditional Persian dish crafted from ground lamb or beef, potatoes, and onions, seasoned with turmeric and eggs, and then pan-fried. The name “Kotlet” is derived from the word “cutlet”, which refers to a flat-shaped patty made from ground meat. These flavorful patties are perfect for sandwiches or served alongside your favorite sides.
Ingredients:
3 medium potatoes
1 medium onion
300 grams ground meat (beef or chicken)
Salt and pepper, to taste
Turmeric, to taste
2 eggs (optional)
1 to 2 tablespoons breadcrumbs or chickpea flour (if needed)
Oil for frying
Instructions:
1. Prepare the Potatoes and Onion:
Peel and finely grate the potatoes.
Grate the onion and separate the juice. Discard the juice and combine the grated onion with the grated potatoes.
2. Combine Ingredients:
Add the ground meat, salt, pepper, and turmeric to the potato-onion mixture.
If using, incorporate the egg into the mixture.
Mix all ingredients thoroughly until well combined.
3. Adjust Consistency:
If the mixture is too loose, add 1 to 2 tablespoons of breadcrumbs or chickpea flour and mix again until it reaches a suitable consistency.
4. Rest the Mixture:
Let the kutlet mixture sit for about 30 minutes to allow the flavors to meld.
5. Fry the Cutlets:
Heat oil in a pan over medium heat.
Shape portions of the mixture into round or oval patties and carefully place them in the hot oil.
Fry each side for approximately 3-5 minutes, or until golden brown and crispy.
6. Serve:
Drain the kutlets on a paper towel to remove excess oil.
Serve warm, accompanied by your favorite sauce or salad.
