▎Ingredients
For the Chicken:
2 cups chicken (thighs or breasts)
1 large onion, sliced
1-2 garlic cloves, minced
1 teaspoon turmeric
Salt and pepper to taste
4 cups water or chicken broth
1/2 cup vegetable oil
For the Rice:
2 cups basmati rice
1/2 teaspoon saffron threads (soaked in 5 tablespoons hot water)
1/2 cup plain yogurt
2 large eggs
1 tablespoon vegetable oil or melted butter
Salt to taste
For Garnish (optional):
Sautéed 1 cup barberries (zereshk) in butter
Toasted sliced almonds or pistachios
Fresh herbs (such as parsley)
▎Instructions
▎Step 1: Prepare the Chicken
1. Sauté Onions and Garlic: In a large pot, heat 1 tablespoon of vegetable oil over medium heat. Then add the sliced onions and minced garlic, cooking until they turn golden brown.
2. Cook Chicken: Add the chicken pieces along with turmeric, salt, and pepper. Brown the chicken on all sides.
3. Simmer: Pour in the water or chicken broth, bring to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the chicken is cooked through. Remove the chicken and allow it to cool. Reserve the broth for later use.
▎Step 2: Prepare the Rice
1. Soak the Rice: Rinse the basmati rice under cold water until it runs clear. Soak in water for at least 1 hour, then drain.
2. Parboil the Rice: In a large pot, bring salted water to a boil. Add the soaked rice and cook for about 5-7 minutes until partially cooked. Drain and set aside.
▎Step 3: Mix the Tahchin Base
1. Combine Ingredients: In a large bowl, mix the drained rice with yogurt, eggs, saffron water, and melted butter or oil. Stir gently to combine.
▎Step 4: Assemble Tahchin
1. Layering: In a non-stick pot or a well-greased baking dish, spread a layer of the rice mixture on the bottom. Place the cooked chicken pieces on top, then cover with the remaining rice mixture.
2. Create a Crust: Press down gently to compact the layers.
▎Step 5: Cook Tahchin
1. Stovetop Method: Cover the pot with a lid and cook on low heat for about 45 minutes to 1 hour. For an extra crispy crust, place a clean kitchen towel under the lid to absorb steam.
Oven Method: Preheat your oven to 350°F (175°C). Cover with foil and bake for about 1 hour. Remove the foil for the last 15 minutes for added crispiness.
▎Step 6: Serve
1. Unmold: Once cooked, let it rest for about 10 minutes before flipping it onto a serving platter.
2. Garnish: Top with sautéed barberries and toasted nuts if desired.
